looking for peoples views on weather to blanch cauliflower before freezing or not to bother and freeze fresh?

I tend to blanch all veg before freezing in order to kill off bacteria which might affect storage qualities.

If you're going to eat it within a month or so, perhaps it's not necessary.
I try to take one day at a time, but sometimes several days all attack me at once...

I Blanche all veg too. It locks in all the vitamins and flavour and stops bacteria rotting the veg.

Only ones I don't blanch are peas and corn, but I blanch everything else. Otherwise, they're tough when thawed and cooked.

Do bacteria work when frozen? ……… Can frozen veg rot? ……. Feels a bit questionable. I'm a non blancher, nothing, ever. Cant be faffing about with that, haven't had any issues.

Bacteria was maybe the wrong word. Blanching slows or stops the actions of enzymes. If vegetables are not blanched or blanching is not long enough the enzymes continue to be active during frozen storage causing off colour off flavour and toughening.
