Red amaranth

I've grown some red amaranth this season after reading about it in a novel.
They can be eaten at any stage from shoots to large plants. Mine have grown furiously and love this hot weather.
So I took some home to try. They taste a lot like spinach, but I think tastier. Apparently they are full of minerals much like spinach, so I've discovered a new and tasty veg! :)

Could this be what someone is growing in the tunnel. They said the plant they are growing can be used in salad.

Theres a few recipies online, google search, they seem to suggest curries and stir fries.

Dont think its the same as what is in the tunnel. This thing grows six foot tall with tassels on the top like a ruby red sweetcorn  ???

Ahh yes thats it although the leaves are greener on that one.

Sorry to hijack. What is it.

Its a pain in the backside as it seeds everywhere. Can it be eaten.
