storing cabbages
« on: August 20, 2013, 14:04 »
Does anyone know how long you can store cabbages (summer ones) and the best way? I want to pull them all up, before they get eaten anymore.

They'll last a fortnight in the fridge, but apart from freezing them, I don't think there is a way - and freezing means you can't use them for coleslaw - which is where mos tof my summer ones end up  ;)

You could try a clamp but I wouldn't guarantee it for summer ones  :)
I cook therefore I grow

As MoS said -- couple of weeks in the fridge

Never found any other way of storing summer cabbages, so now don't grow more than I will use for coleslaw, plus a couple of roast dinner accompaniments

you make a circular trench , put your cabbages in the center cover with some straw then cover with soil ! but it is a faff when you want one to get it out then recover.

I was always told you can't freeze cabbage successfully because it goes mushy when thawed & cooked  :( so I've never frozen it. If you can what's the best way, 3 min pre boil or straight in freezer ?? Because I've got 2 large cabbage that have been ready for lifting for over a week now but we've already got half of 1 in the fridge & there's only me that eats it,  I only grow 4 of any veg as my other half only eats peas. She say's any other veg is only put on your plate for decoration, . She has a taste disorder which means she finds most veg very strong & unpleasant to eat  ??? .
Keith.  ;)

chop/shred as normal, straight into freezer as is and when you come to cook it.... steam it gently.

Not sure how much this will help you, but I was given a recipe for red cabbage by a Danish girl that involved cooking it in a minimum of blackcurrant juice like Ribena plus - was there something else like apples - can't remember. Anyway, I portioned and bagged it for the freezer and it was fine when defrosted, though not crisp because of the cooking. Try an experiment by cutting a cabbage into three portions, then direct freeze one, do a minimum blanch on another, then find a recipe for green cabbage with added ingredients and cook the last portion as per recipe then freeze in bags.
I work very hard so don't expect me to think as well.

Bubble and squeak frozen into burger shape patties, when you want them just pop them in the oven and cook for 25-30 mins.

My lot would eat these till them come out of their ears. Mind you looking at the size of our cabbages it wouldnt clear more than a couple  ::)

Red cabbage can be done the gordon ramsey way. And then frozen to store. This is another fav in this house. Yummy yum. Apart from that cabbages wont store.

I think BQ has hit the nail on the head. Apart from using them in a recipe, they won't keep for long - but! Something rings a very distant bell with me about pulling them up and hanging the by their stalks in a cool place?

What is the Gordon Ramsey way? Is this pickled?

I gurgled as well mum and found several different recipes for Gordon Ramsay and red cabbage so I just wondered if it was braised or pickled BQ was referring to. (I love red cabbage you see!)

As it is I'm just looking to store a half dozen for a few of weeks.
