made one today it came out of the oven looking good so went off to do my jobs and let it cool now not being happy it was cooked in the middle I had gave it 15 mins  when I came to turn it out the tin it had sunk and was still not cooked in the middle , , ive now cut out the middle .
has anyone got a cake type carrot cake recipe instead of the wetter type as they never work for me .
I haven't tried it yet I suppose I must .

8oz caster sugar
6oz butter
2 large eggs
8oz self raising flower
Pinch of cinnamon
Pinch of ginger
Pinch salt
8oz grated raw carrot
4oz chopped walnuts (I usually do half sultanas half walnuts)


Cream together butter and sugar
Beat in eggs one at a time
Add flour and spices and fold in with a metal spoon
Add carrot, nuts (and sultanas) and fold in with wooden spoon
Turn into lined 8 inch cake tin or 2 x 7inch sandwich tins
Bake for about an hour at 180C or until skewer to the centre of the cake comes out clean
2 small cakes would probably be about 45 minutes.

This recipe never fails me, even when I've doubled it up for my 10 inch tin!!

I have just started using this one which has turned out great every time, even when I doubled the recipe. If you read the reviews a few people have reduced the oil and increased the carrot a bit, which I did but not by as much. I make it in a roasting tin as a tray bake, but doubled the amount to make four deeper rectangular cakes to decorate for neighbours for Easter Use a skewer to check if cooked, i rarely go by their times.

my recipie is almost the same as the bbc one using the oil , it tastes great nutty spicy its just the texture and I noticed the bbc one is a different tin .
I will try the muppetgirly recipe as its got butter and may have the texture im looking for which is cakey but moist like you get in coffee shops
Tosca 100 you must have very happy neighbours .

Let me know how it turns out. Don't be afraid if the batter appears a little dryer than normal cake mix, the water from the carrots will resort in a lovely moist sponge :) if it does need a little thinning out, use a splash of milk, not water.

I will but will be couple of weeks got this one to eat first its very tasty but would prefer the more cakey type love cake but even I have my limits ha ha
