Title: Baby Carrots
Post by: sueanthony on July 04, 2010, 20:35
Hi, does anyone have any tips on how to keep baby carrots firm once picked.  They seem to go all soft if left for more than a couple of hours.  I wondered whether there was a way of stopping this from happening....... ???

Someone on another thread (can't remember who or where) recommended putting them in water overnight in the fridge, they should then refresh and keep OK after that (I assume still in the fridge)

Don't pick them till you need them and then only pick what you are going to eat.

To me the main point of growing your own is to have food at the peak of freshness.

Agreed.  I've been snacking on mine for a few days now.  Best eaten straight out of the ground.

I will try and just pick what I need.  Trouble is I pull them out and am so excited about how wonderful they are, I want to prepare some wonderful meal to have with them, then by the time I have got the meal prepared the carrots are like rubber, very attractive!!!!!!

Of course this suggestion all depends on how far away your veg plot is but...
I tend to prepare the meal and then run down last minute and dig the veg and use it straight away.  That way I manage to get most of the veg on the table within an hour of picking at the most and it keeps all it's sweetness and doesn't go floppy.

Mine were slightly bitter when wirey but as they've fattened up a bit they have got sweeter.
