Hi Kerry, the recipe I posted earlier in the month is fine if you substitute apple juice for the beer, or I guess you could use alchohol free beer. If I was clever I'd add a link to it but I have no idea how. It was under a title "Christmas is coming help needed" and I think it was on "chatting on the plot"

Thanks from me too, we can't abide alcohol in food.

Quick question.

Do you have to cook these in a steamer or can you just use an oven?
P.S i don't have a steamer as yet. counting the pennies till i can afford one.

I like my dried fruit pre-soaked in sloe gin, but here's my fave recipe for Christmas pud for Christmas day. Not too rich for after the bird.

Nora’s Christmas Pudding
My favourite Christmas Pudding recipe for Christmas Day. It’s a wartime recipe and therefore is not too rich. I find that most Christmas Puddings are far too heavy and for Christmas Day. This light version never fails to please.

I tend to soak the dried fruit overnight in a little sloe gin, but here is the original:

4oz soft brown sugar
4oz suet
2oz breadcrumbs
2oz self raising flour
1lb mixed fruit
1tsp mixed spice
1 egg
1 carrot, grated
1 apple, grated

Mix all the ingredients together, add a little milk if necessary. Place in a 2lb pudding bowl, cover with a layer of greaseproof paper and tie down with a pudding cloth. Steam in a pressure cooker for 3hrs at 5psi.

No, you can just put it in a pan with water no more than a third of the way up and simmer it gently for about 4 hours for a small one and 6 ish hours for a large one. I tend to put an upturned enamel plate in the bottom of the pan to stand it on but a bit of screwed up foil would do. Just don't let it boil dry. I know some people have cooked them in an Aga in a dish of water but I've never tried that, so I just put it on the hob on a low light.

Definitely ok to call me Carol, being called Poolfield seems strange but it's the name of the farm that our house is on and I wasn't feeling creative when I joined

Hope all goes well this weekend.
