Title: sesame seed buns
Post by: Lardman on April 20, 2012, 17:02
What's the secret, how do you get the seeds to stick to the bread ?  :(

I want a nice soft bun with seeds on top, (like a big mac bun). I just end up with a tray full of seeds and nothing on top  Someone tell me the magic spell which sticks the seed to the bun please.

I give mine a quick spray with water before I put sunflower seeds on and then leave to rise -spose it would work the same with sesame seeds

After the spray, do you sprinkle, press or dip ?

I found the egg wash made the tops brown and crispy when I was aiming for soft and pale

Not sure what I can be doing wrong then.  :( I've tried the water, sprinkle / pat , but I did it after letting them rise.

Will egg wash always make the roll crispy even if using a soft roll recipe?

I mix the egg with water to thin it. :)
