If I can't Ask The Audience, I'd guess that it gets the food down to the roots rather than keeping it near the surface.

i didnt know that but it  seems to make a lot of sense.
Nature teaches more than she preaches. There are no sermons in stones. It is easier to get a spark out of a stone than a moral.  byJohn Burroughs:

Soft growth, more susceptible to disease

Anyhow, we feed the soil, not the plants.

The strong smell from cooking cabbage is from sulphur.   So ... grasping for a plausible answer ... perhaps the onion prevents sulphur being formed.  Something to do with alkaloid in onion perhaps ...

My Mum used to put bicarbonate of soda n with her cabbage as it kept it a nice green colour, but what she didn't realise and I only found out after I was an adult, is that it also takes all the goodness out of the cabbage!!!!

Well I've been Googling for ages trying to win myself this £1M.  Seems that a walnut shell or a celery stick are recommended.  Personally, I only boil it for a minute or two and the smell is entirely pleasant.

So, shaun my man, if you don't know the correct answer, you can't actually say that my answer is wrong ...
