Title: coleslaw
Post by: rosiecider on July 07, 2015, 13:21
Hi

I lurve coleslaw and would like advice on which type of cabbage any one has used to make it, I did read somewhere about a cabbage that manufacturers largely use but of course cannot find the article or remember the name :(

Holland Winter White is the one they use, I think

I use the inside of any cabbage I grow  ;)
I start in Summer with Hispi, then in Autumn it's onto Minicole and then in the Winter it's Tundra  :D

Not the white one you normally would use for coleslaw but my favourite tip. 'Red Drum' talk about versatile, we have used it in slaw, steamed and made into a red cabbage casserole. Only grown it the once and had great success with it, tight heavy heads, even with slug attack, peeling off the outers we still had some great cabbage.

I like Langedijk which is quite versatile too and recommended for coleslaw https://www.kingsseeds.com/Products/Vegetables/Cabbage/Cabbage-Coleslaw-Langedijk-4

I usually buy a white cabbage for my slaw, but my SIL uses the inside of any cabbage.  I also add courgettes to mine for a bit of a change!

Mmmmmmm, brussels, now there's an idea!   ;)

We use grated kohl rabi to make coleslaw

That's one of the best reasons, Mr Dog!

Even one made from young swede is acceptable in small quantities too!

Only 'discovered' KR about 4 years ago but is now a must on the to grow list. Virtually all that I grow goes into 'slaw.

Just made a load of coleslaw with some of my Golden Acre cabbage and some of my Palla rosso.
The red cabbage gives it a spicy hint, but only a small amount.
Always add a carrot, celery stick, spring onion and a handful of chives to mine.
Do cheat and use the supermarket mayonnaise, mixed with Dijon mustard and my homemade yoghurt. But that's what we like.

...and glide a cut piece of garlic around the bowl before filling it, add a few sliced almonds a few sultanas as well...

Then think of saying 'Wow' later on!

Mayo itself, has mustard in it....... but yes some supermarket mayo's don't have much flavour, so you could add a tad more  ;)

I add a pinch of mild chilli powder to the Hellman's light one, as it seems fairly flavourless to my tastebuds   :D
