I've defrosted a pork steak, and then realised I have 4 peppers in the fridge, that really need using up soon
So will roast a trayful of peppers, onions, squash and toms and add the sliced up pork towards the end and serve it over some rice. There will be loads of roast veg left, so some for tomorrow and the rest for the freezer. That'll do!
