I never thought I'd say this
« on: July 04, 2013, 17:20 »
I'm getting fed up with strawberries. The ones in the polytunnel started cropping in May. The ones outside in a 3 x 6 metre bed started to crop last month and are exceeding anything they'd done in the past. Every day I'm picking a large colander full to overflowing with them.

Sooner or later family and neighbours will be sick of them too. To compound this glut, there appears to be a bumper harvest of gooseberries and blackcurrants to come in the next few days

Mush 'em with a little sugar and freeze in small containers. Known in our house as 'freezer jam' - it keeps the freshness without the claggy, cooked taste of strawberry jam.

I am sooo jealous haha! Definitely do the freezer jam as above (makes a great basis for coolis), drying them works well too: http://twolittlecavaliers.com/2013/01/strawberry-recipe-oven-dried-strawberries.html

These can then be kept in an airtight jar to brighten up cereals, plain yoghurt etc in the winter months.

And you are complaining

Freeze them in 1lb bags and when you are in need of a strawberry fix or goosies or blackcurrants turn them into mousses, icecreams, fools, cheesecakes, mix them with some fresh apples and cornflour for a pie or turn them into jam.

Or send me the address and I will be over with my freezer boxes. ;)

Or use a blender to make smoothies.  Freeze the smoothies until needed.
