quarter pint white wine vinegar
a little water
big bunch mint chopped
teaspoon of sugar

Adjust to taste.  Or do what my mum did and add chopped mint to malt vinegar.  It never did me any harm, any harm, any harm,  :?  :lol:

i used to make it with ordenarry vinegar never used white wine vinegar will try it though

I don't add sugar to mine. I just chop the mint very very finely, add enough cider vinegar to make a thick gloopy slurry, then let it sit in a jar or a covered bowl for a day. Next day, take a couple of teaspoons of this, add it to 3 times the amount of cider vinegar, and use.

Steeping the chopped mint overnight allows the vinegar to extract the flavour. The concentrated mix keeps for over a week in a fridge (might keep for longer than that, it is so acidic)

My Mum used to make mint jelly, no need for geatine, you just cook the vinegar with the sugar and loads of chopped mint, cool and put in jars with wax etc.  The posh way to make mint sauce nowadays is with balsamic vinegar. I have to say it tastes quite yummy.
I know less today than I did yesterday, and I knew nothing then!
