Mint Chutney

A good pint of mint leaves
1lb onions
1lb apples
1/2lb green or red tomatoes
1lb seedless raisins or sultanas
2 teaspoons salt
2 teaspoons mustard
1 pint vinegar
1lb sugar

Put leaves, onions, apples, tomatoes and raisins through mincer or processor and cook in 3/4pint of vinegar until soft (about 20 mins) Pour remaining vinegar over sugar.  Add this after the cooking and boil up.  Cool and jar up.

Lovely and delicate.  Enjoy.  Mrs Bouquet

does it need to be a particular type of vinegar or is that preferential? :) sounds fab btw so thanks

For this particular one I use a fairly good quality malt vinegar.  I don't use spice vinegar for this as it is too strong for the lovely delicate flavour.
You can use a 50/50 mix of brown and white vinegar if you like.  enjoy. Mrs Bouquet

Sounds yummy, what does it go well with? I'm guessing lamb but have you found it goes well with anything else?

We like it  with quiches, Lamb curries, and cold lamb and meats.  Its lovely with cheese and grilled or bbq'd fish.  but whatever, you choose. Thank you for your interest.  Enjoy, Mrs Bouquet
