Hello all out there,
I have just started to make my first batch of Cheddar cheese. I made use of Katie Thear's instructions and followed it to the point. All went well until it came to the point where the curd must "Mass" so one can cut it into slabs for the "Cheddaring" process. It just wont become so massed together that one could cut it into the slabs. It actually crumbled as I tried to cut it. I eventually gave up and started the press process. Can anybody possibly give me some advice here please.
