I often use it and I think the great soup diet soup uses cabbage too.  I usually add it towards the end, shredded.

The other flavours are just other veg carrots celery what ever is in the fridge

I put a fair amount of kale in soup and it tastes ok try a bit and see it all depends on your personal taste.

Ideal if you make a Tuscan bean soup.  Onion, potatoes, beans (harricot, borlotti or butter) veggie stock and shredded cabbage.  Just the thing for a winter lunch
