chilli Peppers Hot!!!!

Hi All
I have managed to overwinter 10 chilli plants I grow last year which will be put in a heated debroom to wake them up in the next few weeks or so.

These plants produced alot of chillie between them, but none seemed to be very hot, I have been told that i did not stress them enough. That i should of not watered them as much as i did, is this true does stressing the plants make them hoter or have i missed a trick and not done something i should have.
The plants are a mixture of what should have been the more hotters one

one trick ive learned over the years with chilli's is that you should only water them when the soil is dry and to pick the chilli's when the soil is dry, i.e. leave the soil to dry out, pick the chilli's and then water. also chilli's do very well in small pots, ive found the smaller the better (within reason).Hope that helped,
