I have a "red haven" peach tree which is covered in fruit they are the right size and colour for peaches but are as hard as rocks the tree is starting to drop some fruits although they are still solid when do i start to pick the fruit as obviously i dont want to lose them! ???

It's something that's in the genetic process, to drop smaller excess fruits so that ripening can happen with larger fruits. There's no way to stop it. I simply pick up all the dropped ones asap and keep them in a bowl in the house to ripen. Need to be fast or the ants will get there first. As for ripening on the tree, they still need longer. Mine are dropping fruit and none of the tree fruits are near ripe yet although they're all a lovely rose colour. Patience and keep the tree watered if you haven't had much rain.
