Good Morning all,
I made some pickled onions 2 years ago yesterday which I have just discovered in the back of my cupboard.
They have never been opened. Could I still eat them? How long do they last?

They shouldn't be off as such, but you might find the texture has suffered a bit. Open them and see what you think. If they look and smell OK, I would eat them, unless they were unacceptably soggy to your taste.

As long as you used a vinegar of at least 5% acetic acid and the jar sealed well then there shouldn't be an issue. If you left the spices in the jar then you'll be in for a special treat as they'll have taken on more flavour!
(I had a customer in the Midlands who wouldn't open them until they were 2 years old. These were pretty pokey in year 1, by the second year they were dynamite!!)

I'm entering them into a show so the judge may be in for a treat (or a shock :lol:)

Check the schedule for the rules on how old they can be for the judge to risk tasting them. Either that or explore the Women’s institute on rules for showing & age. I think you might f8nd they have to be no more than a year old!
