Hi,
Last week I pickled and marinade some Aubergines, which entailed dropping the aubergines into the boiling cider vinegar for about 3 minutes and then putting them straight into a marinade of olive oil, garlic, chilli and oregano. They look loveley so fingers crossed they taste good!
Anyway, the recipie says you can use any combination of veg, changing the herb accordingly. Now does anyone think this will work with Green toms? I have alot of them to jar up and obviously don't want them wasted, but was a bit concerned that 3 minutes in boiling vinegar might make them too soft. What does everyone think?

Peel, quarter and deseed toms.  Boil the vinegar and leave to cool slightly and add that to the marinade and toms.  I'm no pickle expert, it's just a recipe I found.  Hope it helps.
