[New shoot]

I've tried this for the first time this year and it is pretty good. 

You roast the beetroot, peel when cool enough to handle and chunk them up, then open freeze on a baking tray before bagging up.  At this point they set into a solid lump in each bag and I thought 'darn it', but it is OK.  Defrost and it quickly falls back into chunks, then just needs a re-heat in the oven in a foil covered dish.

They don't leak loads of juice and come out pretty much as if you had done them from fresh

we have been freezing beetroot for a number of years now mainly boiled before putting in the freezer but will give your roasted beetroot a try new shoot sounds good as we always have a glut of beetroot to freeze

maybe try carrots the same way as we always buy a net of carrots for winter we use or home grown carrots first but they don't last us all winter anyway good piece of cooking advise new shoot
