Meatballs

Made HM meatballs but Florence said they are too soft. If I buy lidl's ones from the fridge they stay firm but mine were much more mincy like a faggot and little miss isnt keen. Any ideas mine did have other stuff which lidl's dont they just have meat.

Is it not just as easy to buy mince and make them yourself? I haven't done meatballs but I made my own burgers for years out pure mince, adding onions herbs etc as I fancied.

I've found that to get a firmer texture your need to really get your hands into the mixture and 'pulp' it a lot so that there is no semblance of a mince texture left (in fact it is almost like a thick purée). Then make up your balls (tightly) and if you have time let them rest for half an hour before cooking. It is the 'pulping' that's jaw ethe biggest difference though

Just rolling the mince into balls with wet hands, and then frying them off before adding them to a sauce to finish cooking does seem to work OK. Adding herbs etc is fine but "wet" ingredients like onion can make them softer.

I put bread in mine, Harry's bread might work well in them as it's often got rice flour in it I think

Only good use for Harrys rice bread believe me. Makes excellent bread crumbs but then again it comes out of the packet like cardboard so my machine makes light work of it.

I used to use breadcrumbs when I wanted to make them stretch to more burgers. At least you know what's in them, when you make them yourself.  I used to buy steak and mince it myself with my mother's old mincer which clamped to the bench.

We mince ours it has a different taste as it hasent got those mystery bits in , with the meat balls dont over pulp or it may go too much the other way i put beef and pork mince in mine as well as bread crunbs , garlic and tomatoe paste salt and pepper they were yum make a nice sandwich as well .

I havent had chance yet to make more but pulped the patties abit more than usual and the sausage patties were much better.

Recipe no good for us as its cheese and egg, death on a plate. I tend to put as little as i can it so we can identify any issues.
