Mincemeat Buns

This is good if you are tired of pastry, or find a jar of mincemeat at the back of the larder.  It is also great for children to help with and eat  :D   Makes 32.

12 oz mincemeat
8 oz currants
2 eggs
5 oz caster sugar
5 oz soft butter of margarine
8 oz S.R. flour
32 paper cake cases

Combine all the ingredients in a large bowl and beat well for 2 minutes.
Divide the mixture evenly into the paper cases.  (or put them into bun tins if preferred)
Bake in preheated oven at 160c, 325 f or gas 3 for 25-30 mins until golden and springy to the touch.
Transfer cases to racks to cool.

Enjoy.     Mrs Bouquet      (I know have put this on a few years ago, but maybe Newbies will like it).

Along the same lines, I make a batch of these each year.   Mincemeat pie cookies.

250g butter
140g sugar
1 egg yolk
zest 1 satsuma/clementine
300g plain flour
jar mincemeat

Beat butter and sugar until creamy.  Add egg yolk and zest.  Sift in flour and most of mincemeat until it all comes together.  Pull off biscuit size lumps  and press out onto a  lined baking tray.  Put some more mincemeat on top .  Bake 10 mins, 180C, gas 6 for 10 minutes until golden.  Cool on a rack.
