very pleased with my initiative

just about to make a choc cake for my OH birthday when i realised that we were short of marg, but then i remembered we made a fatless sponge at school it came out very light.

Glad it turned out well.

You can also make a choc cake with vegetable oil too.

The one I use is similar to MOS recipe but here it is.

It is a Mary Berry recipe.
10oz SR flour
3 tabs cocoa powder
1 and 1/2 tsp bicarbonate of soda
1 and 1/2 tsp baking powder
7 and 1/2oz caster sugar
3 tablespoons golden syrup
8 fl oz sunflower oil
8 fl oz milk
 Sift the dry ingredients together.
Whack in the wet ones and divide between 3 straight edge 8 - 9 in sandwich tins.
Bake at 160C or 140C fan oven for about 35 mins.

Sandwich the layers with chocolate butter cream. or whipped double cream and cover with melted chocolate.

just ate a slice it was very light and less rich than a normal sponge may make it again.

Fat less sponges are very light and a good carrier for a light syrup flavoured with  alchohol to give a little moistness. And a little double cream of course. :D

I like fat less sponges much better than ones with butter. I like the lightness that comes from beating the eggs.    :)
