I don't bother chitting as I have always had excellent germination using fresh seed.
The newer "super sweet" varieties germinate less easily, and because of that are often coated with a fungicide - if they are Red or somesuch wash your hands afterwards!

(But if in paper pots indoors, or similar, unlikely to be a problem)

Supposedly they don;t like being transplanted, so be careful if using cells or root-trainers etc.
