Pickled Garlic

Has anyone got a recipe for pickled garlic please. I bought some once in a pound shop and it was delicious :lol: I cant seem to find a recipe tho. I have bought Vals book, but there isnt a recipe in there! (Lots of other lovely soon to be tried other recipes tho) Tatty

I would love the recipe for an Indian garlic pickle I once bought. Wow, was it good!
Must try googling for it.
I started out with nothing.....and I've still got most of it.

Hi, I have an unusual recipe given to me by a friend.
Here it is:
Preserved Garlic

Ingredients:
4 large/or 8 small, heads of Garlic
1/2 pt   white wine vinegar
1/2 pt   water
5 oz      caster sugar
2 teasp cumin seeds
2 teasp coriander seeds
2 sections of star anise
2       dried red chillies
some    extra virgin olive oil

Directions:
Separate & peel cloves.
Put vinegar, water, sugar & spices to boil. Simmer for 5 minutes, add the garlic, & simmer for 10 - 15 minutes, or until just tender. Lift out garlic & spices with a slotted spoon & pack into cold sterilised jars. Completely cover with oil. Cover after 1 hour, seal tightly, & leave to mature for at least two weeks. Enjoy in stews, salads, or on their own.

I did make some - about a quarter the quantity.The pickle itself was lovely for adding to salad dressings.
