They're nice and dry and I have thousands of them.  What does anyone reckon?  Good idea or bad?

They may well be ok. Last year I put the spinach that had bolted on my compost heap, and very soon had a lovely crop of new spinach plants growing on the top of it.

What variety was it? I'd give it a whirl just to find out. Who knows you may have created some masterpiece.

The seed of the ones that Bolt may be genetically predisposed to bolting, in which case the ones you grow from saved-seed will be more likely to bolt than the mixture you had in the original crop.

Have they in fact bolted, or run their natural course? There is quite a difference. I would expect things to be seeding at this time of year anyway.

If it seeded in, say spring, a few weeks after emerging, then that is bolting and I would not use the seed as Kristen says.
Did it really tell you to do THAT on the packet?
