Green Chillies

I have about a kilo of green chillies (very few turned red this year due to the horrible summer) and apart from freezing some, I've no idea what to do with the rest...any ideas?  I've seen a few pickling recipes on the interweb but any other ideas would be gratefully appreciated!

We have loads of green chillies too...and green peppers, this is our recipie for a quick tasty dish

several green chillies (depends how hot you like it) I use 4 very long ones
2 green peppers cut into quarters
2 small onions cut into quarters
several ripe tomatoes
some garlic
a veg oxo cube
some spices (I use a bit of madras powder)
a bit of oil for cooking (ghee is better if you have it)
bit of water

Meathod
pan fry all the veg until just going soft but still crunchy
add the ripe toms and allow to soften
add the oxo, spices and just enough water to make it into a nice sauce

That's it !

Serve with Basmati rice...it's yummy

Note: I think the thing that makes it so good is the large pieces of onion and peppers (cut into quarters) if you get the onions just right ie: crunchy its amazing and much nicer than having everything chopped up small
