Cheese & Celery Loaf

1lb SR flour
2 tspns salt
1 1/2oz butter
3 large sticks celery
6oz mature cheddar
1 garlic clove
1 egg
1/2 pint milk, less 2 tbspns

Grease a 2lb loaf tin
Sift flour and salt into a bowl and rub in fat until it resembles fine breadcrumbs.

Finely chop celery, crush garlic and coarsely grate cheese, add these to flour.  Beat egg and milk together and gradually add to form a soft dough.
Knead lightly and quickly and shape into an oblong Put it into loaf tin and cook for about 55 mins on 220c or gas 7

I made this for my guests and they really liked it, I think I made it too wet so the texture was a bit coarse but it tasted lovely. Thanks again.

is it doughy like banana bread? or drier like normal bread?

Mine came out like a scone mixture. I think I'll add a pinch of cayenne next time to give it a bit of a kick.

Hi poolfield 2, I am so glad, I feel so responsible when |I post recipes, - "what if they don't like it, what if their's doesn't turn out like mine, suppose they're expecting something completely different".  It gives me sleepless nights.
However.  I am really pleased that you and your visitors enjoyed.

It should not be doughy and wet, it is a fairly dry mix, but not so dry as to be crumbly.  Having said that every time I make it, it varies, but hey we all love it  (if not my family and guests are very tactful !!)

Having read your last post I realise my mix was definitely too wet but trying again will be a popular move. Now I just need to work out how to make the wheat free version for me.

If your banana bread is too doughy I think you ought to use less banana but more brown and smelly ones.  My recipe uses three bananas but I find it too puddingy so I use one REALLY ripe brown banana.  It almost has fruit flies hovering over it it is so ripe.
