BEETROOT: what to do with them

I think we must have sown a bit too much beetroot, and despite giving them away, we still have a lot left (about a 12 ft row !). How can we keep them for later use? If we leave them in the ground, I presume they'll just get too big and woody?
Should we store them in sand?
Anyone tied keeping them?
All advice welcome.

Freeze,dry storage,pickling and borscht are the main options.
I'm very important. I have many leather-bound books and my apartment smells of rich mahogany.

I keep mine in a half barrel full of peat in the shed they are ok till about april/may the year after.

Did you have any problems?

I kept mine in damp sand one year, just in a large wooden crate type box.  No problems at all storing from about late summer through to early spring.

Should be fine for 4-5 months stored that way.  Store in a cool place mind.  :)

Alternatively, cook them by boiling or baking and de-skin and freeze.  I have done that a few times too.  Fine for soups, but texure is questionable if making a salad with them.  In which case the first option would be best.

My dad often made beetroot wine - not at all bad either!  :)

Does anyone have a recipe for beetroot cake - I ate some yesterday (at Basildon House - National trust) and it was nice and moist - I think it would freeze well. 
Not a strong beetroot flavour.

The peat is bone dry now and it seems ok as long as they are buried in it.

Can't believe non of you lot have suggested roasting them. ROAST them, great way of eating them.

I've not tried it but there is a good one in the Green & Black's Chocolate cookbook too.

My plan is to try interesting pickling - beetroot is lovely in raspberry balsamic or red wine vinegar, rosemary and garlic make nice additions. I hope to experiment and hopefully get some nice potential gifts out of it to use in hampers at Christmas.

There's several recipes for beetroot here, including one for chocolate and beetroot cake.  Apparently it's gorgeous.
I try to take one day at a time, but sometimes several days all attack me at once...
