Went to a new years eve party several years ago, it was a bring a plate affair, one guy turned up with these cubed spuds that had a real kick, but was not too overpowering - just very more-ish.
I can remember (just) that he parboiled them, and finished them off in the oven.
Does anyone know of the spice combination to use? (please)
They were crispy on the utside, yet fluffy in the middle.

Thanks WG, but have seen that one, these were definitely oven baked rather than sauteed/fried. Sort of cubed wedgies with Indian attitude.

i just parboil them - let them cool - mix up a basic curry powder (i use chilli powder, ground ginger, tumeric and crushed pepper and coriander seeds) but a medium shop bought mix would do.
dice spuds - and coat with seasoning - then i fry them in ghee / clarified butter
i have done them in oven too - but i prefer them fried

No reason that you can't adapt method to oven baking. Here is the spice mixture I will be using for a big batch (2kg potatoes) this weekend. And do use a decent tattie - Pink Fir Apple is highly suitable.
quarter tsp asafoetida
5 tsp cumin seed
scant tsp fenugreek
5 tsp black mustard seed
hot cayenne powder or ground dried chiles to taste (tsp in my case)
5 Tbsp sesame seed
scant tsp ground turmeric
3 tsp salt
black pepper to taste
2 Tbsp dried ground amchoor (green mango)
tsp = teaspoon
Tbsp = tablespoon
