Title: what to do with marrow

yesterday a fellow allotmenter gave me a marrow and to be honest ive never had it before,any ideas how to cook it?

It's quite a delicate flavour so just peeling, deseeding and boiling can be a bit boring. They're quite nice stuffed with mince or a herby veg mixture. And I think there's a recipe for marrow and ginger jam on the site.

I've got two marrows on the way, but have done the following with a marrow sized courgette I got given;-
Slice into 2" deep slices, then hollow out into 'cup' shapes using a teaspoon. Fill the 'cups' with a mixture of chopped tomato, onion, peppers, mince or whatever you fancy, dowse with a bit of olive oil, then roast in the oven for 25 mins. Then drizzle the tops with grated cheese and grill for the last 5 mins.

I hate boiled marrow too, but OH likes his marrow stuffed with mince vegetables and cooked rice.

Your recipe sounds nice though Mellow.  I've got a huge courgette here waiting for something to be done wth it!!!!

hi i love marrows and have at least 30 grow well and large , these will store for abot four months in a cool dry dark place and must not toucn each other , the best way i like to cook the is as a curry with other veg but if you do want to stuff them then make sure the the meqat is spicy as the marrow does not have a lot of flavour itself .

I made Marrow and Ginger Jam this weekend.  Difficult to get to set - but acheived by adding lime juice,  Tastes fantastic and lasts forever.  Yet another way of savouring the taste of summer in those darker days ahead.

i might be wrong here,but someone told me to cut the top off remove the seeds and fill the middle with vodka,put the top back on and tape it up,hang for a few months,drill a hole in the bottom and drain the liquid into a bottle,and hey presto you will be drunk as a lord   :)
any one else done this ?

How about Marrow Rum? (from "It's Raining Plums")

Cut top off good sized marrow and scoop out all seeds.  Fill cavity with dark brown sugar, packing it in.  A 3lb marrow will hold as much as 2lb sugar.  Make a small hole in the bottom of the marrow with a knitting needle or something similar.  Put the marrow in a nylon stocking or one leg of a pair of tights.  Hang it up over a bowl.  Allow fermenting liquid to drip through into a bowl: depending on the size of the marrow the whole process will take up to 2 months.  Decant the syrupy brown liquer into bottles and drink straight away or leave it to mature further.

Haven't tried it myself - would be interested to hear of anybody who has.

i was nearly right ,
yours sounds a bit better than mine,so you dont put any rum in the marrow at all.
need to raid the wifes tight collection can i use any colour tights ? :D

The Marrow Rum sounds fun - and cheaper than wasting a bottle of vodka if it all goes horribly wrong!  I hate to think of the gooey mess left at the end of the fermentation, though...  :shock:

a friend of mine did this with melon.....took his word for it that it was good  :(
