Title: Apple Pie

I would normally do the deserts at Christmas but this year my elder sister is hosting and she wants to do everything.  Younger sister suggested that I make a different desert every Sunday between September and Christmas which is fine.  Husband has requested a latice top apple pie for his choice this weekend.  Does anyone have a really good recipe?  I don't have a problem with making pastry and am quite happy to try making my own.  Thanks in anticipation.

personally, I prefer my apple pies to be plain and simple.  Lightly stewed apple, with a little sugar .... just stewed til the chunks are soft, not mushy.    Normal pastry, no messing about with it.   Some people like to add cinnamon, but I cant stand the stuff.  Apple pie is a classic that can stand up on it's own, it doesnt need tarting up IMO.   :)

I thoroughly agree........but they have to be tart apples......like Bramleys.  I'm not keen on sweet apples in a pie, and sometimes add a little lemon to get the acid balance right ;)
