hi all this is my first year of growing tomato plants  iv got lots of toms small iv taken out all the side shoots but do i start to take the over stems of so the sun can get to the toms any advice thanks ciderman

Toms do not need sun to ripen them, they need warnth.
If the bottom leaves start to go yellow, then you can snap them off. But only ever take off the leaves from below the fruits which are lowest.
Once the bottom ones are harvested, the next layer can come off ..if you see what I mean
Well that's how I was taught to do it!
