Hi all.  Just after a bit of help.  I made marmalade for the first time this weekend and it is really runny and the shreds have floated to the top.  It reached the correct temp and the setting point was ok when tested on a saucer.  So any ideas what I did wrong and if there is anyway I can sort it out?

Marguerite Patten talks about marmalade in her book.  I'll have a look tonight and try and find an answer.  Can't promise I'll be able to log on for a few days though - work trip.

I suspect it's lacking in pectin.  I had this problem with one lot of marmalade I made and had to tip it back out of the jars and return it to the pan. Re-heated and stirred in two sachets "Silver Spoon" pectin (26 g) in order to get a good set.  If you do this, don't forget to wash out the jars you've used and re-sterilise before returning the marmalade to them.

When it has set, leave the marmalade to cool for 30 minutes – to prevent the fruit rising to the top in the jar – before ladling through a funnel into the warm sterilised jars

can anyone tell me where i can get the sachets of pectin , i got some once and went to get some more and they had none , since then not seen any any where :cry:
did ask a bloke in a shop once and he came back proudly with a pack of quick gel for flans  :lol:

You can certainly get them at our Morrisons. Sainsburys seem only to stock Certo (liquid). Silver Spoon and you get 4 sachets.  I prefer the dried 'cause you haven't got to use it all at once or within a short time. Not tried the supermarket that can't be named. I haven't got a clue if you're in Greece tho!

there is a German product but as i don't speak German its not easy , i prefer the silver spoon powder so i will try the shops you mentioned , i tried the shop whose name cannot be mentioned  and i haven't seen it there .may be able to sent away for it .

Chrissie, I tried my Morrisons and no joy there but I did get some at Asda in the end, good luck.
