Spectacular veggie recipe needed

Help.  I have been invited to a vegetarian pot luck dinner party on New Years Eve and I need a main course.  My friend is a very good vegetarian cook so it needs to be something really different and unexpected.  I don't mind how complex or expensive just as long as it is the best thing on the table.  Not that I am competitive mind. :wink:

Just thought someone on here might be able to help.  So go on, make my day. :lol:

Sorry for the flippant remark, my friend is a lifelong vegetarian and once cooked pork chops for my 50th birthday meal despite not being able to eat them, oh and also being jewish.  What a good friend I have.  I only joked about my birthday menu and she cooked it for me. :shock:

Boiled beetroot served cold with corn tortillas, sour cream, refried beans, tomato salsa and fresh lime wedges.

Refried beans are best with lard but a veggie substitute would work.

I like where you are going with that WG.  I absoultely love refried beans and chillies.

My FIL is a vegetarian so I tried this last time the in-laws visited. Went down well with everyone including my kids. MIL then asked for the recipe so she could reproduce it for Christmas dinner for FIL.

I used mixed fruit instead of raisins, and it gave it a Christmassy taste!

Should serve 4-6 approx

1 (400 g)   can chickpeas
100 g        raisins (optional)
200 g        chopped hazelnuts
3               potatoes
1               onion
2     tablespoons olive oil
    salt (I use about 1 teaspoon)
    black pepper

1.   Soak raisins (if using) for a few hours to plump them up.
2.   Preheat oven to 150°C Line a loaf pan with foil.
3.   Finely chop onion. Peel and finely grate potatoes.
4.   Drain and rinse chickpeas. Mash.
5.   Combine onion, potatoes and chickpeas. Add raisins, oil and seasonings. Mix well.
6.   Transfer mixture to prepared pan, press down gently and smooth the surface. Bake in the preheated oven for about 20 minutes.

I found it needed a little longer than 20mins, but you would need to cover the top in foil to stop burning.

Simple, but one of the most successful veggie dinners I ever did was a pancake layer.  There were about 8/9 pancakes, with 3 fillings.  One was spinach mixed with cream cheese I think it was, one was muchrooms in a bechamel sauce and the other one was mashed carrots with a sauce.  I remember the 3 colours, beige, green and orange So the pnancakes were all stacked up  with the filling in between, and covered over with a lovely cheesey sauce.

They weren't rolled up, but layered flat on top of each other.  then the whole thing was put under the grill to brown the top a bit and served with roasted vegetables.
