Hi

I only do Sloe Gin, but I leave that on the fuit for about 12 weeks, then leave to settle in the gin bottle before final bottling.

If you have the patience, filtering through coffee filter paper gives a sparklingly clear final product.  You will go through a few filter papers though (say 5-7)!  Sometimes I turn up an unused box of filter papers in a opportunity shop for next to nothing, and stash it away for fruit gins, walnut liqueure etc.
