Title: Peach and Amaretto mincemeat recipe

Put all the following ingredients into a large bowl. Give a good mix, Cover with cling film and give it a good mix for the next couple of days then pot into sterilised  jars or large plastic storage boxes and store in the fridge.

All the following are prepared weights

8 oz peeled cored and finely diced Bramley apples
12oz peaches skinned, stoned and cut into small dice.
4oz mixed peel
4oz chopped skinned roasted hazelnuts
12 oz raisins
12 oz mixed fruit
12 oz sultanas
6oz light brown sugar
6oz dark brown sugar
1 tsp mixed spice
large pinch nutmeg
Zest and juice of 2 orange
3 fl oz Amaretto
2 fl oz brandy

I will be serving this mincemeat in mince pies made with butter and almond shortbread pastry as normal mince pies and also with  an almond macaroon topping.

Then with double cream whipped with a good slug of Amaretto.

I think I may have posted the cherry one somewhere, but I can put it here too.
Same method
175g currants
175g raisins
175g sultanas
225g chopped glace cherries
225g Bramley apples peeled cored  finely diced
100g chopped walnuts
350g demerara    sugar
1 tsp mixed spice
300ml brandy or rum
I prefer the rum, but I was a pirate in a past life ;) :lol: :lol:

My friend gave me 2 jars last year and I used one so I have some but I love cherries.
Thank you Mrs Bee is it too late to make it now?
I topped some of mine with marzipan last year much nicer than pastry.
The almond pastry sounds good too.

No it is not too late to make the cherry one.

I have made it in early December one year after my son had evaporated a large amount and there wasn't enough to make the mince pies.

The peach recipe is a new concoction this year. It came to me after the local Turkish shop was selling trays of peaches for £3, which I just couldn't turn down. :D You will have to wait until next year if you want to try that one.

I suppose you could use tinned peaches or if you have any bottled peaches that might work. Although it is the fresh peaches that make it so moreish. :D
