i find the colder the room tempreture the more solid the sediment is perhaps putting it in somewhre such aas a pantry or understairs cupboard a few hours before bottling.

I rack off into another sterilised demi john until its pretty clear before bottling.

I get lovely clear wine every time by bulk storing and clearing.

1. Once the wine has stopped fermenting rack off as cleanly as possible to another DJ and leave this in a cool/cold place for a couple of weeks to drop any transfered sediment and clear.

2. Rack again into the now cleaned primary DJ tring not to transfere any of the now hugely reduced sediment and leave once again for around two weeks or until clear.

3. Repeat number 2 again if neccessary.

4. You should/will now have a beautifully clear wine ready for bottling with no sediment at all.

You will lose a little bit of wine (around half a bottle) doing this but what you will be left with is a great looking bright wine that you can be proud to serve to anyone!

I tend to bulk store my wines in the DJ's as it stores better this way but i do bottle some when i run out of DJ's.

No not to each racking.

I add a CT and Pot Sorbate to the receptive DJ for the first racking an rack onto them.
I then give it a gentle swirl to mix them in and then continue on as per the list.

Once it's been stopped wth both items thats it, no need to do it again ;)

It was the hygiene rather than the fermenting I was concerned about, given that a gallon doesn't last a fortnight I suspect I may be being paranoid though !  ::)

When bottling I always first syphon off into a bucket so I don't have to worry about the sediment while concentrating on bottling.

You can get seddiment traps that go on the end of the syphon to help, eg:
