hers a blast from the past in jam making recipes for ya //
its an old gloucestshire recipe and its yum... and if ya got a load of windfall fruit ,bruised etc its perfick for it
2lbs each of pears ,cooking apples ,plums
grated zest and juice of a lrge lemon
pinch ground cloves
1/2 oz fresh ginger root ,bash it with a heavy spoon to bruise it up
5lbs sugar
peel all the fruit take pips out etc
shove it in ya jam pan with all the rest ya ingrediants
simer it till all the fruits soft dont let it stick to the pan sides by banging some water in it
stir ya sugar in until its gone completly then boil it hard to setting point .. jar as usal .. leave it for a while as it meds to mature ,,,, hot pikelets n a pint mug of tea ur sorted
