whats about chutney!

made up this recipe as i went along,its made from what i had laying about hence the name,tastes good though.


3 pints malt vinegar
2lb of preserving sugar
1lb runner beans slice finely
2lb finely diced red onion
8oz finely cubed carrot
1 tube of tomato puree
2 cloves of garlic
1 cup balsamic vinegar
3 table spoons of treacle
1teaspoon mixed spices
1 teaspoon of ground ginger
4 heaped tablespoons of corn flour.

use a big pan,put vinegars and sugars and treacle in and bring to the boil then add all the rest of the ingredients,MINUS the corn flour,simmer for an hour then to thicken add the corn flour mixed in a little water to thicken it.
pot into warmed jars.job done! this makes 4-5 12oz jars.
