Silly question...

If I leave some smallish shop bought potatos to one side and let them grow roots and eyes, can they then be used to grow more potatos in the patch?

Yes but I'm not one who'd recommend it.  I recommend planting certified seed only.  They are cheap enough if you know where to buy.

Last year we got seed spuds from both Wilkinson and Poundland.  They were planted through black plastic laid over very solid undug ground at the bottom of our huge plot. It was covered in weed.  They were really good spuds, lasted us for 5 months and we won first prize in our local show.  

Perhaps it weas just luck!!!!!!!!!!! :lol:
