Android phone: How do I turn off Google Assistant (hopefully forever)?

I feel like I'm on "2001 a Space Odyssey" and I'm trying to shut off HAL.
As an old person, I hate having an inanimate object sticking it's nose in my business.
I've considered sealing the phone in a block of concrete and dropping it in a lake. That might be extreme, and having a mobile phone would probably be required by my OH. Turning it off until I feel like talking to someone might also be frowned upon by the Mrs.
HAL, I mean Google Assistant, will not let me look up "how do I turn off Google Assistant permanently". Cat's out of the bag, GA knows I'm trying to kill it now.
Any suggestions appreciated.

I figured I might hear from you. Per the article, it is scary the surveillance your devices may be doing without permission.
That actually may be illegal. I think that if you record a conversation in our state, at least one of the people involved must be aware of the recording (unless there is a court order).
