Title: Aubergine glut

Aubergine glut..We were doing OK but now loads are ready at once,apart from mousaka how can I use lots,no alcohol reciepes please as all demi johns ,grolsh bottles,fermenting barrel and stockings(see marrows)are in full use!

Thinly sliced, salted and rinsed then dry. Dip in seasoned flour then quick fry until browned.

Got told that one in a Greek cafe but I've never got them quite as nice as they were in Greece

I think I need a way of using lots at once.Yes,they are nice fried especially if you pop a slice on toasted bread that has roast tom. sauce then topped with spanish type ham,a few basil leaves then thinly sliced cheese on top and grilled just enough to melt the cheese.Yum!
