My fav recipe is
900g tomatoes
225g onions
1 red chilli. chopped, deseed if you don't like it too hot
300ml white vinegar
100g demarara sugar
1 tsp salt
1 tsp paprika
1/4 tsp chilli powder
I sometimes add 1 tsp of smoked paprika to add a smoky note.
This can be stored and matured or eaten within a couple of weeks.
Another favourite is
450g tomatoes
120g red onions chopped finely
1 small red chilli chopped
2 large crushed cloves of garlic
80g soft brown sugar
80ml
malt vinegar
1/2 tsp onion seeds
1/2 tsp salt
1 tab sunflower oil
heat the oil gently and fry onions and chilli until soft
Stir in garlic and onion seeds
Add all remaining ingredients and continue as usual. :)
Yes I meant soft brown sugar.

Yes I meant soft brown sugar and if you knew the sort of trying day I have had today, I think I did quite well to only make one mistake.
