malt loaf
« on: February 19, 2011, 08:00 »
after all thse years of having to bring back sorean malt loaf i finally found a great recipie , its moist and sticky freezes wel as it makes 2 loafs and if you have any old dried prunes lying around you can bung them in as well .

malt loaf

8oz sultarnas
8 oz rasins ( i didnt have any rasins so i used dried prunes )
3oz butter
1/2 pt water
12oz sr flour
1/2 teaspoon bicarb of soda
pinch of salt
8oz soft broen sugar
2 eggs beaten
2 1/2 tablespoons of malt
and for a bit of colour i put in a tablespoon of black treacle .

oven 180 degs
in a pan put fruit, butter, water, bring to the boil and simmer 5 mins , then allow to cool slightly

sift flour bicarb salt together add the sugar

pour in the warm mixture add in the eggs and malt
mix well till combined
pour into 2 prepared tins ( i lined mine with parchment )
bake in the centre of the oven for 30 mins then lower the shelf and back for another 30 .
or till a sqewer comes out clean .

cooking time 60 mins
oven at 180

just leave a day or two or wilpower permits and it will start to got sticky and i lasts out for ages

mmmm I love malt loaf, spread with lashings of lurpak  :D.
Once tried to make it at school - but the recipe used yeast and I think I must have killed the yeast so we ended up with a door stop instead (it was too hard for even the dog to get it's teeth into ).
Staffies are softer than you think.

Chrissie is probably no longer in Greece, I think their journey back to the UK started today  :D

I wonder whether they've eaten all the malt loaf by now though
