This incredibly simple recipe is fantastic if you need to prepare a delicious meal on short notice. Guaranteed to make a novice cook look like a genius. My son deserves credit for bringing this one to the family (he's a very good cook, especially of Asian and Italian dishes).
Although I recommend using a wok for the cooking, a skillet will do. Serves four.
Ingredients:
- 8 eggs
- 6 tomatoes (assumes medium-sized tomatoes, adjust as needed for small or large)
- 4 to 6 teaspoons salt (adjust to taste; also depends on the size of your tomatoes). Kosher salt recommended.
- 2 to 4 tablespoons sugar
- 2 or more scallions, separated into whites and greens
- Cooking oil
Prepare white or brown rice sufficient for 4 servings (for my family that is 1.5 cups of dry rice, prepared).
Prep:
Chop scallions. Cut tomatoes into wedges. Whisk eggs in a bowl.
Cook:
Heat oil in wok on high heat. Scramble eggs just until no liquid remains, then remove and set aside.
Add a bit more oil on high heat, throw in scallion whites for a second, then add the tomatoes. Cook for a minute, toss in salt and sugar, then cover and cook for 2 minutes. Add eggs back in, break up both tomatoes and eggs, stirring so both are evenly combined. Toss in scallion greens, cook for only about 30 seconds, then serve over rice.
