ok so ya Christmas dinners coming up n ya want ya roasties to be good .so here's my way of making em just so .. take hens egg sized potato's 2 per person is enough DO NOT PEEL THEM just scrub em they wil be fine. pressure cook them for 3 mins from the moment steam rises only . if your using a normal steamer until the skin splits .peel the skin when they are cold .use a fork to just fluff up the surface slightly .now put in your tray a good 1/4 lb of goose fat or beef dripping and bang it over the ring to melt when ist done put your tatties in carfully so they dont splash you ,turn them over in the fat carfully again .now put them in the bottom of the oven and let them cook till they golden brown and crispy .keep pouring fat over them with a large cooking spoon .time them for about 40 mins . ten minutes afore they due to come out sprinkle a good heaped teaspoon of sea salt over them and a couple teaspoons of mixed dried herbs,,,, enjoy ..

now karl just a bit of teeny weeny detail here,do you salt the water that you boil them in 1st ?

ermmmmmmm no cos i dont boil em .. i ermmmmm pressure cooks em  :roll:

I always salt the pressure cooker water :D  and the pan if I use it.

i dont salt them at all , i add it at the end and it brings em out smashing

just par boil them mate .dont let em fall aprt or they will stay soggy the trick is crispy outside n fluffy in :wink:

i use a steamer and salt that water hayley ,it maybe a habbit i think  :)
karl i think you should add salt 1st.

nah no point the flavouring doesnt get on the spuds cos its just boiled aways in my finkin 8)

Yes, just par boil them. I do them different sizes so some are just all crisp and some still have some spud in the middle. A bit of thyme and rosemary is nice in the fat too.
Self-sufficient in rasberries and bindweed. Slug pellets can be handy.
