It makes a nice chilli.  I am a bit of a - cook as you go along, and keep tasting  ::) sort of cook

But basically lots of onions, cook slowly till soft,  put aside, brown mince, add chilli powder and salt, maybe a bit of celery salt as well put onions back in. Lots more stirring and tasting and general adjusting of seasoning,  adding some stock and or water and cook slowly.  I ususally have some home cooked red kidney beans about, and add about as many as seems suitable (I told you I wasn't a recipe person)

I usually batch cook using around 5 or more lbs of meat, then freeze and when I want it just warm it in a small saucepan with a little water to stop it burning.

This is very nice in the winter with baked potatoes or potatoes cut as thick chips drizzeled with a little oil and cooked in the oven.  Cooker is always on so heat is not an issue but I might cook differently if I had to switch on to cook

A similar recipe can be used but with less meat lots of any sort of garden veg and much more water / stock to make what I call spicy vegetable soup.  Another winter warmer.

For pork mince it has to be sausage patties.  Mince with fresh sage, breadcrumbs, egg yolk, parsley, finely chopped onion, grated lemon rind, garlic and whatever else you like to add.

As has been said, it goes great with Asian flavours too.

I also make some great Italian meatballs with it.  The recipe says to combine it with beef or veal but I never do.  The secret ingredient here is fennel seeds.  I have a killer recipe if you would like it.
Cheese makes everything better.

I've had pork mince in the freezer for far too long as well I'm taking out tomorrow and attempting meatballs just need to dig out a recipe - fingers crossed
