Give me some ideas for beetroot

I've got a good crop of golden beetroot ready to pull up, and I'm struggling a bit for ideas what to do with them. We don't really eat pickled beetroot. I do like them roasted in foil in the oven, but any ideas for other things to do with them? I've got quite a few :)

If you can bear the faffing about/have a mandolin, try:

Chopping 3 golf-ball sized beets into matchsticks, do the same with a pear, add a small handful of pumpkin seeds and half a crumbled block of feta and dress with a lemon/oil dressing and some mint leaves.

I had golden beetroots sliced and sauteed in butter in a swishy restaurant, and they were gorgeous  :)

Beetroot chutney  with tomato or ginger
Beetroot cake
beetroot and chocolate cake
Beetroot roasted with other root veg, garlic, onion, rosemary, olive oil,  lemon juice and herbs
Braised with red cabbage, apple, sugar, vinegar and herbs
Cooked and cooled in an orange and herb vinegrette with garlic and chives
Mixed with apple and creme fraiche and a little wine vinegar, crushed garlic or chopped red onion
Beetroot fritters in a chickpea batter with whatever herbs take your fancy or garlic and chilli
 :)

So jealous that you have a crop of beetroot mine had several setbacks, the worse beng the ......... fox who dug up and cr........ed on the seedlings. :mad:

Thanks, guys. That's given me a few things to try.

I've never been too much into beetroot because I hate having the red colour leaking out and staining everything on the plate, but I thought I'd give these golden beetroot a try and they've done well and look absolutely lovely. I'll let you know if they taste lovely too :)

Golden beet is better roasted in the oven when it releases its sweetness. I did the bring to the boil and simmer for 45 minutes but it was disappointing.  Someone on here recommended I roasted them as they were a dead loss done in the pan of water, and he was right, they're just fab.  Also the sauteed in butter was lovely jubbly too  :)

You're right CQ - golden beetroot is way better roasted  :)

Going with your sauteed in butter thought, they are also good in curry.  Fry onion and add garlic, ginger, chilli and chopped beetroot once the onion is browned.  Add curry spices\paste\powder and liquid of some sort - pasata is good.  The natural sweetness of the beetroot really matches well with the flavours of cumin and coriander  :)

Do you wrap it in foil to roast it, or just cut into large chunks on a tray with a bit of oil?

You can do either  :)  Wrapped in foil it half steams\half bakes but is still better flavoured than boiled.  Chunked and put on a tray with a bit of oil is more a true roast with toasty bits at the edges.  Herbs, garlic and chilli are all good chopped and put through the coating oil  :)

I'm growing golden beetroot for the first time this year. I find roasting one of the best ways to treat ordinary red beetroot, is golden really not particularly good done any other way.

Beetroot in curry is a favourite of mine too. :)

The golden is reputed to be the finer flavour but I was disappointed just by the pan and water method but roasting it turned into into a gourmet feast

I've not curried it but being a curry nut I will definitely give it a go. I think the cumin seed will really make it sing. 

I wrap the beets whole in foil and roast, or slice them thickly and put them on big trays with all sorts of other veggies onto trays for roasting in the oven with thyme or rosemary etc
