Really nice soup Resterant quality but rich here goes 300g onion
25g of garlic
2 tbsp butter
1200 g squash
1000mlchicken stock or veg stock
500ml cream
Salt
Lemon juice 1 tbsp or ti taste
Sweat onion and garlic on low heat for 15 min or until soft but not brown add salt to the onions
When onions are soft add squash and liquids not lemon juice simmer until squash is mushy must be soft low to medium heat.blend well the pass through a sieve stir in lemon juice and season to taste garnish with pepper olive oil and toasted pumpkin seeds etc you could also garnish with bacon. Bits
